I'm creating a custom winpe environment because it seems very useful. I've got a handful of tools, but I can't think of other applications I can make us of. So far I have:

-HD Tune
-SUPERantispyware (auto downloader)
-Double Driver
-Auslogics Disk Defrag
-Autoruns
-BlueScreenView
-imagex
-Roadkils Apps (rawcopy, diskimage, unstoppable copier)
-some mbr backup program

Anyone have any other tools they recommend?

Check out http://www.hiren.info/pages/bootcd, it might save you a lot of time.

What is 'SUPERantispyware (auto downloader)'?

Well the winpe doesn't have a web browser (yet), but I need the latest superantispyware portable (it works well in the bootable environment). So I made a batch script that uses WGET to download the latest version from their site. Basically you launch the batch file and then wait for the program to open.

I also just setup TeamViewer so I can fix the machine booted with winpe downstairs whilst being upstairs :)

Hiren Boot CD does, and it also has lots of network drivers which automaically setup, it found my very old USB Linksys Wireless Adapter and the I used Opera, which Hiren have included on the desktop.

Thanks
