To mitigate Luke's scenario, I would recommend a RAID level greater than 6

Nope, no RAID level, no matter if it's 6, 60, 100, 600, quadruple parity, etc. is the same as a backup. One crypt-o-virus on one workstation connected to the storage will completely negate all the redundancy in the world. The only true solution is a separate backup with file versioning.

The complexity probably squares if you do RAID6 of RAID6s. So should be price.
