Is there a simple way to have employees book and check the status of a conference room from within Outlook?
I looked into setting up a "conference room" Team in MS Teams and adding a calendar but it seems overly complicated.

Can't you just create multiple calendars, one per conference room that needs scheduling, in the existing team (or the team for everyone) and handle it that way.

All the way back in the 1990s we did something similar in the office I worked in at the time. It was on "the honor system" as far as not deleting someone else's time block if you wanted the same time, and that worked just fine.

Are you using the Teams Room license? For the conference room setup with a larger camera and special microphone.
REALLY cool thing!
Otherwise, you use Scheduling Assistant in 365...in which you first setup "Rooms"

Teams Rooms devices are quite good, and they have just enough access to schedule against a resource mailbox, of which there is a type meant for conference rooms.
