Website Contact Submissions showing up in email for only a second

I've been helping a small business with a contact us form on their website. It worked without issue for ages but recently the submissions stopped working. I set it up with WP Mail SMTP plugin and the mail is working again BUT when it gets delivered it pops up the toast notification but then the message is nowhere to be found in Thunderbird. I checked spam, trash and there are no rules or filters in place that I am aware of.

When I view the mailbox in Roundcube on the web, the messages are in the inbox but they are greyed out.

Anyone have any ideas what might cause this behavior?

The recommended fix for that is to enable Compact on logout in the settings for the user in Roundcube and then to log out afterwards.

That may help with the other issue as well.
 
Wouldn't doing compact on logout just simply eliminate the grayed out messages? He's trying to figure out why they're getting deleted right away.

@Velvis I'd try making sure that no other email clients or other services are accessing your mailbox and then test it again. One way to make sure everybody is signed out is to reset the password and wait an hour.
