The way I get around this problem is to turn off auto-update and then install updates in date order and in small batches at a time. If you then have a failure, you aren't going to have to uninstall and start again from the beginning. Its time consuming but better than getting the 'reboot of death'.
Once you are in a position to upgrade to 8.1 do it. After upgrading to 8.1, I've never had the issue with multiple updates.

Didn't you install Windows 8.1 directly? Supposedly you can install windows 8.1 with a generic key if you have the installer for 8.1. See here

Then when 8.1 loads with the generic key, enter your Windows 8.0 key and it is supposed to activate. That would have cut down a lot of updates etc. I know how you feel though, I've had a couple of machines where I've had to do the install Windows 8, install multiple updates, then install 8.1 from thei store, then it's updates. They could have made their process easier imo.

Are we due for a service pack for 7??

There are no plans for a Service Pack 2 for Windows 7. It ought to have one but doing so would extend the EOL date for the product and Microsoft wants people to move to Windows 8 or Windows 10 by letting Windows 7 die.

I've recently bought NTLite and started slipstreaming updates into Windows 7 & 8.

It's still in Beta but Nuhi is fast at responding to queries.

I'm trying to create a Windows 8.1 iso with it now... Had a few problems, but getting closer to creating an iso with all updates to December 2014.

Windows 8 is garbage, think we all know this. Look on the bright side, Win 8 only has what? Like 10% market share? With Windows 10 around the corner, Win 8 will will start becoming as scarce as Vista. Good riddance.
