Egg colour most likely down to the breed of hen. These will be free a hybrid hen(point of lay) we just buy them in now. We where going to start a farm shop 18 years ago. Never really did started with eggs and kept selling them as they look after themselves as it's self service.

The books stand is for a local Hospice to raise funds for them all self service and just need 5 minutes now and again to put them into some order.

Stores feature predominantly white eggs here but brown are available. I buy brown eggs when buying direct on the farm here. As @PBComputer said, it's the breed they have for layers.

Wow it took me a while to find the eggs. Wait they don't refrigerate eggs in the UK?

I've heard that refrigerating eggs is actually just a North American thing

We refrigerate anything and everything here, especially in summer when we get 40+ C.
But generally eggs are refrigerated here as a matter of course.
Our fridges have "egg pots" to stand them in built into the door.
And as for white v brown. We get a mixture here but white are not that common. Not rare but not as common as brown.

Oh and by the way...to get back on topic...Nice setup Paul. ;):p:D

We used to have that in our refrigerators here in the states, also. But the newer refrigerators don't have that. Seems strange now that I think about it. When I was growing up we always had the eggs in the egg pots in the door(s).

I concur with Barcelona, Paul. I wish my shop(s) in the past looked that good!
 
UK-style eggs are basically illegal for sale in the USA (not sure about direct from farm....), and USA-style eggs are likely illegal in the UK.

In the USA, eggs must be washed. That removes both any foreign material/chicken poop but also the outermost waxy sealing layer on the eggs, which leaves just the porous shell. That leaves more possibility for bacteria to get into the eggs as well as allowing more evaporation from them, so they have to be refrigerated. In the UK my understanding is that USA-style washing of the eggs may actually be against the law because it's removing that protective outer coating, but since eggs have that they can be kept at room temperature for a while prior to sale since they're sealed.

As far as the egg holders in the door, they disappeared because it turns out the door is basically the worst possible place in the refrigerator to store eggs. It's the warmest part, and they also get jostled around every time the door gets opened or closed which is also bad for them.
 
I think the act of refrigerating eggs in the UK varies a lot from person to person, and probably depends a lot on available fridge space.

Since eggs don't generally need to be refrigerated, many people leave them out of the fridge. However, like most foods that don't need to be refrigerated, they stay fresh longer in a fridge than they do in a humid, warm room. So, if you have space for them in the fridge, it makes sense to put them in there (and a lot of UK fridges do still come with egg trays in the door).

Personally speaking, I refrigerate eggs whenever there's room in the fridge for them, which is most of the time. But I also put other foods, that don't necessarily need to be refrigerated, like bread, crumpets, potato cakes, fruit, etc in the fridge, simply because they stay fresh a lot longer in there.

Its not just about "eggs!"
We're discussing white v brown eggs, whether eggs should be refrigerated or not, whether they are only refrigerated in North America, fridges that have egg pots in the doors etc. And as an aside, we're liking Pauls new shop reno.... :D

are we talking just regular chook eggs or other animals and variations as well?
