What security would you guys recommend learning specifically utm's and firewalls ? There are so many choices and I am looking to up my security throughout my clients

Can you be more specific. Are you looking for certification? General knowledge? Favorite hardware?

Ubiquiti is a favorite of many on here. Including myself. I started using USG's instead of ERL's last year. But it's not nearly as full featured as things like Untangle which is a real UTM. The nice thing about Untangle is you can download and run it on any standard computer. And, if I remember correctly, you get the full version for 30 day trial before it kicks back to the free, reduced functionality version. So it's easy to get up to speed with no cost other than time. @YeOldeStonecat uses their appliances and I think others have mentioned that as well.

I do recommend testing a bunch of UTMs...and selecting one to build a reseller/VAR partnership with. Years ago I used to play around with tons of different *nix firewall distros..and a lot of canned/retail stuff like Sonicwall, etc...and I chose Untangle back around...oh, over 10 years ago. I think they at version 5 back then.

You can poke around and see what it looks like here

For clients that don't need a full UTM...or don't have the budget for a UTM...we use Ubiquiti for our "go to" NAT routers. Both their EdgeRouters, and their Unifi gateways.

I use Ubuquiti for everything from the basic home install (very rare) to micro (such as SOHO, Home business, etc.) and small businesses (generally from 2-50ish endpoints) for a one and done setup. Its affordable for a basic setup (but can get up there in cost for more intuitive setups) and very flexible with the ability to add onto for future use. Plus you can set it up for managed or self-admin.

Untangle can be great but not worth it for a home or even micro to small business (in my area at least) as you have an ongoing monthly fee and can get rather expensive once you start adding in apps which cost $5+ each per month.

I currently use alot of Ubiquiti and some pfsense but I was interested in learning untangled but I wanted to see if it was worth learning as I know it is expensive and most businesses wont favor it.

Ubiquiti and PFSense are great routers....but they're not really full blown UTMs.
FYI, about 2 years ago Ubiquiti hired one of the co-founders of PFSense to take over the Unifi project..which is why we've been seeing Unifi grow in such leaps and bounds in the past 2 years. Chris B.

Untangle is not expensive for a UTM. UTMs will have an initial up front cost, and a recurring subscription cost (you can do monthly or annual). You'll find on average it's less expensive or around the same as other UTMs...and it tends to have more features. Turns into nice monthly recurring revenue for yourself.

Pick a brand, then become as familiar as you can with it. Take their training, develop vendor relationships, just like YOSC said. Start with your own shop, then start deploying them to clients. This will make you intimately familiar with the product, and able to offer a good-for-your-client and profitable-for-you solution. When I went through this several years ago, I chose SonicWall - are they the best? I have no idea, but they are one of the top players and over time, I've learned how to do most things with their units. We've got about 130 in the field right now, so the recurring revenue on the licensing and replacement units shows up very nicely in our income statement.
