RDS Outlook Profile Corruption on Log Out

Server 2016 running RDS.

Outlook connecting to an exchange server (not on premise but fully functional and hosted elsewhere).

Setup the Outlook connection for a user and everything flows fine.

On log out, the RDS profile is stored onto a roaming disk (local to the RDS server, but a separate data drive).

When the user logs back in, the Outlook profile is corrupted.

We have 2 sets of IT MSP's trying to sort this out but so far a lot of head scratching.

Anyone encounter this and have a direction we might explore?
 
Only the Outlook profile is corrupted and not the users also?

Last time I heard of a bug like that was from a buddy of mine he found out it had to do with a local default profile on the systems, I'll try and get a hold of him and ask more on the issue but if I recall it had to do with everyone's rights and local profiles causing the problem he might have said something also something about the shadow copy with the temps but to make sure I'll ask him and re-post.
 
Just the Outlook profile is damaged. And it only just started last night. Users have two Outlook profiles that they choose on launch - email 1 (OK!) and email 2 (corrupted following log out).

Do you mean than ALL users have 2 profiles each, and that the 2nd profile is the one corrupted for any user that connects? Or, do you mean you have multiple users logging into 2 profiles? Without knowing details, I would wonder what changed last night when the problem first started? Anything in the logs to give you a clue?
 
Each user has two outlook profiles, with the second becoming corrupted.

We resolved this by adding new srv records pointing to the mail server. Really bizarre, in my mind.
