keeping install images updated

We use a system of sysprep and dism to capture Windows install images. We get busy and fall behind on keeping our images up to date. Currently we are about 60 behind with 7 home premium. Our current procedure is to restore and image to an actual computer, then update it an re-sysprep and recapture it.. This is ok, but is a bit clunky. Do any of you use VMs to do this? If so could you be specific on what programs you use? Any other ways besides VMs? Any other suggestion to make this process less hassle?
