Clarify UEFI bios, please

OK, got a new gigabyte mobo in yesterday and the box says it's uefi bios. Can someone better explain/clarify this for me? I have not had many systems in yet that I know of that have been UEFI and really don't know much about it.

I thought that UEFI was the nice fancy graphical interfaced bios that you can use a mouse in and get direct connection to the internet and such, but when I press Delete and go into bios, it just looks like the oldschool standard phoenix bios of old. Now I know that there's more to UEFI than just a fancy interface, but what?

OK, that helps. So basically I'm looking at it wrong. It has more to do with the underlying firmware and how it talks to the hardware than the pretty interfaces and connectivity.
