CentOS with 2 RAID arrays...

I'm a relative Linux n00b but I need to build a huge backup server. I need a dual RAID system. A RAID 1 for the system drive and a RAID 5 for the data drive. Due to the software that I will be installing and what I have the most experience with, I am going with CentOS.

Can anybody recommend the best/easiest way to get this going in a logical (easy) manner?
