I need help choosing a business grade desktop that is capable of running 3 monitors, either using onboard graphics (i doubt this is possible) or with a cheap (relatively, of course) card that one of these can run. The monitors havent been bought yet, i have been asked to quote on the full setup.
No set budget, but i am thinking of either a Dell optiplex or HP ProDesk or EliteDesk. My main problem is choosing a card (finding one in stock is even harder!) that will fit in these SFF desktops and the PSU is capable of running.
Both new and refurbished is an option. No preference on monitor connection types, just as long as it can handle 3 monitors.
I am in the UK, but if anyone can recommend any suitable products i'll look to see if i can source it.

Later (G3+?) ProDesk and EliteDesk can handle three monitors using the integrated graphics and 2× DisplayPorts with multi-streaming monitors. I have no first-hand experience, so you'll have to do your own research on that, but this list might get you started (no warranty!) on suitable monitors.

If you add a PCI graphics card, the integrated graphics are disabled – no combining the two sources. Given the current state of graphics card supplies, as you note, you will struggle to find anything suitable. As refurb. is possible, you might find a machine that has a suitable card already installed (or talk to your refurb. supplier).

See, for example, this Spiceworks question.

For our clients desktops, we're pretty exclusively using Lenov ThinkCenter "TinyPC"s....usually combined with the Tiny In One monitors.
For those with autoCAD/Design/Many monitor needs. we choose the TInyWorkstation models...they have a couple of nVidia Quadro options...with 4x miniDP outputs. Crank 'em up with 16 or 32 gigs of RAM for regular users, way more for CAD users, multiple M.2 drives! LOVE that setup! Got one for my wife at home with the 27"rs. Lenovo pretty aggressive with profit margins too for resellers, love working with them.

New Dell Optiplex are shown coming with 4 video ports (2-DP, HDMI and VGA). Will that do what you need? I tend to lean to Optiplex SFF for business use.

I usually sell Lenovo ThinkCentre M720s SFF or Thinkstation P330 SFF units for basic office users. They usually come standard with three video outputs. The P330s with 3x Displayports, and the M720s with one VGA and 2x DisplayPort.
