I find that most times Linux resources fall into one of two categories the first being howto's that give me a list of instructions and commands to follow without much explanation as to what I am doing, and the second being large volumes of Linux instruction that touches on many details. I am looking for a resource that falls in between, and focuses on small business. Does anyone know of such a thing? Basically something that goes in depth (not a howto) on the services and applications required commonly by small businesses, but that does not go into so much depth that it gets confusing.

Alright, this is no real help for this specific topic, but more of a generality ... if there is a tool that doesn't exist that would help you get your job done, build the tool - then you can help others get theirs done as well.
