Video/Data Hub Hardware Suggestions

A client wants to plug his laptop in at conference table to demo software on an lcd tv on the wall. I already have this setup in his office using a vga splitter & long vga cable. He wants something more sophisticated for the conference room & is willing to cut a hole in the conference table. Any ideas of what I might use other than an in-table solution from someone like smartdesks.com?

I like to used these for sending video/audio over a distance for home theater setups, http://www.hdtvsupply.com/hdtocaad.html, you can get them for any video/audio input, I just linked to the hdmi because it came up first. All you need is a cat5/6 from the table to the TV, which should be really easy to hide, and some don't require a power source.
