Are you looking to make a stand-alone firewall to go between a router and some computers or install the firewall on an existing server?.
For a standalone, we actually use Freebsd, see m0n0wall, its a tiny environment which can boot off a cd, usb stick, flash card, etc.

You don't need to know freebsd, but it helps. It boots straight into the firewall menu so there is little you need to do with the O/S unless you are a freebsd person.
People even submit their photos of their home built m0n0walls to show you can use almost any pc to do this:
